Chocolate Quinoa Cookies
These Chocolate Quinoa Crisps are a crunchy, satisfying treat made with puffed quinoa, rich dark chocolate, and creamy peanut butter. Ingredients
- 3 cups puffed quinoa
- 12 oz dark chocolate
- 1/4 cup peanut butter
- 1/2 tsp sea salt
Instructions
- Line a baking sheet with parchment paper.
- Add the chocolate and peanut butter in the microwave. Heat for 20 seconds at a time, pausing to stir the chocolate and peanut butter together. Continue heating and stirring the chocolate mixture until it is completely melted and smooth.
- Stir in the puffed quinoa, using a rubber spatula to carefully coat each piece of quinoa with chocolate.
- Use a spoon to scoop 2 tbsp of the mixture and drop onto the prepared baking sheet. Use the spoon to spread the cookie out into an even circle.
- Continue dividing the mixture into cookies until you have about 30 cookies (or use up all the mixture).
- Sprinkle with sea salt.
- Place the baking sheet into the freezer to chill for 30 minutes.
- Enjoy! Store remaining cookies in the fridge or freezer until ready to consume.
