Chicken Berry Salad

Bright, fresh, and bursting with flavor, this Chicken Berry Salad combines tender chicken with juicy strawberries, blueberries, and mixed greens for a colorful, protein-packed meal. Tossed with crunchy walnuts and a light, homemade vinaigrette, it’s the perfect balance of sweet and savory — ideal for lunch, dinner, or meal prep.

Ingredients

  • 4 cups mixed greens
  • 2 cups (or 10 ounces) chopped rotisserie chicken
  • 1/2 cup chopped strawberries
  • 1/2 cup blueberries
  • ¼ cup feta cheese, crumbled
  • ¼ cup walnuts

For the Vinaigrette:

  • 1/2 cup raspberries
  • 2 tbsp olive oil
  • ½ tbsp shallot
  • ½ tbsp honey
  • ½ tbsp white wine vinegar
  • ½ lemon, juiced
  • ⅛ tsp sea salt
  • ⅛ tsp freshly cracked black pepper
  • 1 tbsp water

Instructions

  1. Prepare the dressing by combining all the ingredients in a high powered blender and pulsing until smooth. You can add additional water to thin if needed.
  2. Plate the salads by laying out the mixed greens and topping with chicken, strawberries, blueberries, feta cheese, and walnuts. Drizzle with the berry vinaigrette.
