Chicken Berry Salad
Bright, fresh, and bursting with flavor, this Chicken Berry Salad combines tender chicken with juicy strawberries, blueberries, and mixed greens for a colorful, protein-packed meal. Ingredients
- 4 cups mixed greens
- 2 cups (or 10 ounces) chopped rotisserie chicken
- 1/2 cup chopped strawberries
- 1/2 cup blueberries
- ¼ cup feta cheese, crumbled
- ¼ cup walnuts
For the Vinaigrette:
- 1/2 cup raspberries
- 2 tbsp olive oil
- ½ tbsp shallot
- ½ tbsp honey
- ½ tbsp white wine vinegar
- ½ lemon, juiced
- ⅛ tsp sea salt
- ⅛ tsp freshly cracked black pepper
- 1 tbsp water
Instructions
- Prepare the dressing by combining all the ingredients in a high powered blender and pulsing until smooth. You can add additional water to thin if needed.
- Plate the salads by laying out the mixed greens and topping with chicken, strawberries, blueberries, feta cheese, and walnuts. Drizzle with the berry vinaigrette.
