High Protein Sheet-Pan Meal-Prep Breakfast Burritos

Fluffy scrambled eggs, savory turkey sausage, crisp veggies, and melted cheese are baked together on one sheet pan for quick prep and easy cleanup. Wrap them in whole grain tortillas, freeze, and reheat for a balanced grab-and-go breakfast that’s perfect for busy weekdays.

Ingredients

  • 1 tbsp olive oil
  • 1 lb turkey sausage
  • 2 Bell Peppers finely chopped
  • 1/2 Yellow Onion finely chopped
  • 10 eggs
  • 1 cup cottage cheese (low fat, small curd)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 1 cup white cheddar (shredded)
  • 1 avocado
  • 1 cup salsa (cooked, not pico de gallo)
  • 8 whole grain or almond flour tortillas

Instructions

  1. Preheat the oven to 400F. Grease a sheet pan with olive oil.
  2. Drop small portions of the turkey sausage on the sheet pan. Then, spread the bell pepper and onion on the remaining spaces on the pan.
  3. Bake for 20 minutes or until the sausage is browned. Stir the veggies halfway through cooking.
  4. Remove from the oven.
  5. Add the eggs, cottage cheese, and seasoning in a separate bowl. Whisk until well combined. Pour over the meat and veggies mixture. Top with the cheese.
  6. Bake for 15-20 minutes, or until the eggs are set and the edges are starting to crisp.
    Allow the egg mixture to cool while you prepare the remaining ingredients. Smash the avocado. Warm the tortillas.
  7. Cut the egg into 8 rectangles. Place the egg portion on top of a warmed tortilla, then top with a portion of the smashed avocado and 2 tbsp salsa.
  8. Roll up the burrito and wrap in foil or parchment paper. Store in the fridge for up to 5 days or the freezer for up to 2 months.
