Chocolate Coconut No Bake Cookies

Ingredients
- 1 cup Unsweetened Shredded Coconut
- 1/2 cup Quick Oats
- 5 ounces dark chocolate (70% or darker)
- 1/8 tsp Sea Salt
Instructions
- Line a baking sheet with parchment paper.
- Heat a large skillet or frying pan over medium heat. Add the coconut and oats to the warm pan. Stir frequently as they toast for 5 to 8 minutes, or until golden brown. Once toasted, transfer them to a large mixing bowl to cool.
- Melt the dark chocolate by microwaving it in a microwave safe bowl for 15 seconds at a time, stirring in between, until fully melted and smooth.
- Pour the melted chocolate into the bowl with the toasted coconut and oats, and stir everything together until well combined.
- Spoon the mixture onto the prepared baking sheet, using the spoon to press the cookies into thin circles, around 2 inches wide. Chill the cookies for 30 minutes, or until they are solid. These cookies can be kept in the fridge or freezer.
