Chocolate Hazelnut Bites
These healthy chocolate hazelnut bites are a guilt-free treat that taste just like a Ferrero Rocher! Packed with crunchy hazelnuts, chocolate, and dates, they’re made with wholesome ingredients to satisfy a sweet tooth without the added sugar or artificial ingredients.

Ingredients
- 1 cup Hazelnuts
- 2 Tbsp Cocoa Powder
- 15 medjool dates, soaked in hot water for 5 minutes
- 1 Tbsp nut butter
- 1/4 tsp Sea Salt
Instructions
- Preheat your oven to 375ºF (191ºC) and line a baking sheet with parchment paper. Spread the hazelnuts on the sheet and bake for 8 to 10 minutes, or until they’re toasted. Take them out of the oven and use a clean kitchen towel to gently rub off the skins. The skins are easier to remove when the hazelnuts are toasted in the oven. Alternatively, you could toast the hazelnuts on the stovetop. This requires heating a medium-sized skillet over medium heat, adding the hazelnuts, and toasting them for about 8 minutes while frequently stirring them.
- Add the cooled, skinned hazelnuts to the food processor and pulse until finely chopped. Set some chopped hazelnuts aside (around 3 tablespoons) for later.
- Next, add the cocoa powder, dates, nut butter, and salt to the chopped hazelnuts in the blender or processor. Blend until the mixture forms a dough.
- Take the dough out and shape it into balls of your desired size. I like to use a generous tablespoon of dough for each ball. Roll each ball in the reserved chopped hazelnuts. Place the coated balls in a sealed container and refrigerate for about 20 minutes to allow them to firm up. Optionally, you could drizzle the tops with melted chocolate and additional sea salt, if desired. They keep in the fridge for up to a week or in the freezer for 3 months.
