Chocolate Coconut No Bake Cookies

These coconut no-bake cookies are a total game changer! With just a handful of simple ingredients, they’re the perfect sweet treat to satisfy your cravings. Packed with fiber and whole grains, you won’t want to miss out on these delicious cookies!

Ingredients

  • 1 cup Unsweetened Shredded Coconut
  • 1/2 cup Quick Oats
  • 5 ounces dark chocolate (70% or darker)
  • 1/8 tsp Sea Salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Heat a large skillet or frying pan over medium heat. Add the coconut and oats to the warm pan. Stir frequently as they toast for 5 to 8 minutes, or until golden brown. Once toasted, transfer them to a large mixing bowl to cool.
  3. Melt the dark chocolate by microwaving it in a microwave safe bowl for 15 seconds at a time, stirring in between, until fully melted and smooth.
  4. Pour the melted chocolate into the bowl with the toasted coconut and oats, and stir everything together until well combined.
  5. Spoon the mixture onto the prepared baking sheet, using the spoon to press the cookies into thin circles, around 2 inches wide. Chill the cookies for 30 minutes, or until they are solid. These cookies can be kept in the fridge or freezer.
