Vanilla Protein Blueberry Pancakes

Ingredients
- 2 cups oats (dried)
- 1 cup vanilla protein powder (or 4 scoops)
- 2 bananas
- 1 cup unsweetened almondmilk
- 1 tsp vanilla extract
- 1/4 cup almond butter
- 1/2 tsp cinnamon
- 1 oz avocado oil spray (as needed for cooking)
- 1 cup frozen blueberries
Instructions
- Blend all ingredients (except blueberries) in a food processor.
- Heat griddle or pan over medium-high heat sprayed with avocado oil. Spoon one quarter of the batter onto the griddle. Cook for about 3-5 minutes or until golden brown and slightly crispy. Flip pancake and cook on the other side until golden brown (approx. another 2-3 minutes). Repeat with remaining batter.
- While the pancakes are cooking, heat frozen blueberries in a small saucepan.
- Add warm blueberries on top of the pancake and enjoy!
