Ingredients
- 1/2 cup steel cut or sprouted oats
- 1/4 cup finely grated carrot
- 1/2 tsp ground cinnamon
- 1 pinch of allspice, ginger, nutmeg, and salt
- 1/2 tbsp chia seeds
- 1 scoop unflavored or vanilla protein powder
- 1/2 tsp vanilla extract
- 1-2 tbsp honey, for sweetness
- 3/4 – 1 cup milk, depending on desired thickness (almond, cashew, hemp)
- 1 tbsp chopped pecans or walnuts, for topping
- 1/4 cup coconut yogurt, for topping
Instructions
- In a glass container, stir together the oats, carrot, spices, chia seeds, and protein powder.
- Add the wet ingredients. Stir thoroughly.
- Refrigerate overnight (at least 6 hours) and serve, topped with chopped nuts and yogurt.
