Carrot Cake Overnight Oats

Ingredients

  • 1/2 cup steel cut or sprouted oats
  • 1/4 cup finely grated carrot
  • 1/2 tsp ground cinnamon
  • 1 pinch of allspice, ginger, nutmeg, and salt
  • 1/2 tbsp chia seeds
  • 1 scoop unflavored or vanilla protein powder
  • 1/2 tsp vanilla extract
  • 1-2 tbsp honey, for sweetness
  • 3/4 – 1 cup milk, depending on desired thickness (almond, cashew, hemp)
  • 1 tbsp chopped pecans or walnuts, for topping
  • 1/4 cup coconut yogurt, for topping

Instructions

  1. In a glass container, stir together the oats, carrot, spices, chia seeds, and protein powder.
  2. Add the wet ingredients. Stir thoroughly.
  3. Refrigerate overnight (at least 6 hours) and serve, topped with chopped nuts and yogurt.
