Peppermint Truffles

Ingredients
- 1 cup Pitted Dates (packed)
- 3 cups Water (just boiled)
- 1/2 cup Cocoa Powder, separated
- 1/2 tsp Peppermint Extract
- 3 tbsp Coconut Oil
- 1/3 cup Dark Chocolate Chips (70% or darker), melted
- 1/4 tsp Sea Salt, for finishing
Instructions
- Place the dates in a medium bowl and cover them with just-boiled water. Let them soak for 15 minutes.
- After soaking, drain the dates and add them to a blender or food processor along with ⅓ cup of the cocoa powder, peppermint extract, coconut oil, chocolate, and sea salt. Blend until the mixture forms a dough-like consistency.
- Scoop the chocolate mixture into rough teaspoon-sized portions. Avoid rolling them with your hands at this stage, as they’ll be too oily. Place the scoops onto a parchment-lined baking sheet and transfer them to the freezer for about 8 to 10 minutes to firm up.
- Take the truffles out of the freezer and use your hands to shape them into smooth balls. Roll each truffle into the extra cocoa powder, then return them to the baking sheet. Let them sit for 5 to 10 minutes to firm up, or refrigerate to speed up the process. Keep refrigerated until ready to enjoy!
