Chickpea Cookie Dough

Ingredients
- 1 (15 oz) can of organic chickpeas, drained and rinsed
- 1/4 cup of nut or seed butter (like almond butter
- 1 tsp vanilla extract
- 1/4 cup almond flour
- 2 Tbsp maple syrup or honey
- 1/4 cup dark chocolate chips (75% cacao)
- 1 pinch of sea salt
Instructions
- Add chickpeas, almond butter, vanilla, almond flour, honey, and salt to a food processor. Process until a thick dough forms.
- Stir in chocolate chips. Can be enjoyed fresh or kept in the fridge for up to one week.
