Chickpea Cookie Dough

Ingredients

  • 1 (15 oz) can of organic chickpeas, drained and rinsed
  • 1/4 cup of nut or seed butter (like almond butter
  • 1 tsp vanilla extract
  • 1/4 cup almond flour
  • 2 Tbsp maple syrup or honey
  • 1/4 cup dark chocolate chips (75% cacao)
  • 1 pinch of sea salt

Instructions

  1. Add chickpeas, almond butter, vanilla, almond flour, honey, and salt to a food processor. Process until a thick dough forms.
  2. Stir in chocolate chips. Can be enjoyed fresh or kept in the fridge for up to one week.
