Ingredients
- 1/2 cup unsweetened almond milk
- 1 medium banana, divided
- 2 tbsp chia seeds
- 1 tsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup vanilla Greek yogurt
- 1 scoop unflavored protein powder (optional)
For topping (optional): cherries, strawberries, pineapple, silvered almonds, dark chocolate chips
Instructions
- In a high-powered blender, combine 1/2 the medium banana, milk, chia seeds, protein powder, maple syrup, and vanilla extract. Pulse until the banana is fully incorporated.
- Slice the remaining banana.
- In a glass jar or other food container, layer the sliced banana, chia mixture, and vanilla yogurt.
- Cover and chill 4 hours or overnight.
- Consume within 5 days of preparation.
