Vanilla Protein Blueberry Pancakes

Ingredients

  • 2 cups oats (dried)
  • 1 cup vanilla protein powder (or 4 scoops)
  • 2 bananas
  • 1 cup unsweetened almondmilk
  • 1 tsp vanilla extract
  • 1/4 cup almond butter
  • 1/2 tsp cinnamon
  • 1 oz avocado oil spray (as needed for cooking)
  • 1 cup frozen blueberries

Instructions

  1. Blend all ingredients (except blueberries) in a food processor.
  2. Heat griddle or pan over medium-high heat sprayed with avocado oil. Spoon one quarter of the batter onto the griddle. Cook for about 3-5 minutes or until golden brown and slightly crispy. Flip pancake and cook on the other side until golden brown (approx. another 2-3 minutes). Repeat with remaining batter.
  3. While the pancakes are cooking, heat frozen blueberries in a small saucepan.
  4. Add warm blueberries on top of the pancake and enjoy!
