Edamame Guacamole

Give your classic guacamole a vibrant, protein-packed twist with this delicious edamame guacamole. Blending creamy avocado with nutrient-rich edamame, zesty lime juice, fresh cilantro, and a kick of jalapeño, this dip is both satisfying and refreshing. This guacamole is perfect for scooping with chips, spreading on toast, or adding to tacos and bowls. It’s a wholesome, flavorful upgrade to your favorite appetizer or snack!

Ingredients

  • 1 cup frozen shelled edamame thawed
  • 1 large ripe avocado peeled and pitted
  • 1/3 cup red onion, roughly chopped
  • 1 small jalapeños, seeds removed and roughly chopped (optional for added heat)
  • 1/4 cup chopped cilantro
  • Juice of 2 small limes
  • 1-2 Tbsp water, as needed
  • 2 cloves garlic minced
  • ½ tsp cumin
  • 1/2 tsp sea salt
  • 1 roma tomato, diced

Instructions

  1. (Optional, but improves texture) Steam the edamame by placing it in a shallow microwave safe dish with 1 tablespoon of water. Cover, then microwave for 1-2 minutes until the edamame is softened. 
  2. Place the edamame in a blender or food processor and pulse several times, scraping down the sides as you go. The goal is to mash up the edamame until it is as smooth as possible.
  3. Add the remaining ingredients (except the tomato) and pulse until smooth. Thin with water, if needed. Before serving, fold in the diced tomato. 
  4. Serve with chips or vegetables or spread on bowls, wraps or sandwiches!
