Edamame Guacamole
Give your classic guacamole a vibrant, protein-packed twist with this delicious edamame guacamole. Blending creamy avocado with nutrient-rich edamame, zesty lime juice, fresh cilantro, and a kick of jalapeño, this dip is both satisfying and refreshing. This guacamole is perfect for scooping with chips, spreading on toast, or adding to tacos and bowls. It’s a wholesome, flavorful upgrade to your favorite appetizer or snack!

Ingredients
- 1 cup frozen shelled edamame thawed
- 1 large ripe avocado peeled and pitted
- 1/3 cup red onion, roughly chopped
- 1 small jalapeños, seeds removed and roughly chopped (optional for added heat)
- 1/4 cup chopped cilantro
- Juice of 2 small limes
- 1-2 Tbsp water, as needed
- 2 cloves garlic minced
- ½ tsp cumin
- 1/2 tsp sea salt
- 1 roma tomato, diced
Instructions
- (Optional, but improves texture) Steam the edamame by placing it in a shallow microwave safe dish with 1 tablespoon of water. Cover, then microwave for 1-2 minutes until the edamame is softened.
- Place the edamame in a blender or food processor and pulse several times, scraping down the sides as you go. The goal is to mash up the edamame until it is as smooth as possible.
- Add the remaining ingredients (except the tomato) and pulse until smooth. Thin with water, if needed. Before serving, fold in the diced tomato.
- Serve with chips or vegetables or spread on bowls, wraps or sandwiches!
