Ingredients

  • 3 cups puffed quinoa
  • 12 oz dark chocolate
  • 1/4 cup peanut butter
  • 1/2 tsp sea salt

Instructions

  1. Line a baking sheet with parchment paper.
  2. Add the chocolate and peanut butter in the microwave. Heat for 20 seconds at a time, pausing to stir the chocolate and peanut butter together. Continue heating and stirring the chocolate mixture until it is completely melted and smooth.
  3. Stir in the puffed quinoa, using a rubber spatula to carefully coat each piece of quinoa with chocolate.
  4. Use a spoon to scoop 2 tbsp of the mixture and drop onto the prepared baking sheet. Use the spoon to spread the cookie out into an even circle.
  5. Continue dividing the mixture into cookies until you have about 30 cookies (or use up all the mixture).
  6. Sprinkle with sea salt.
  7. Place the baking sheet into the freezer to chill for 30 minutes.
  8. Enjoy! Store remaining cookies in the fridge or freezer until ready to consume.
