- Yield: 6 servings
Ingredients
- 6 eggs, hard boiled
- 1/4 cup plain Greek yogurt or plant-based alternative
- 2 tsp Dijon mustard
- 1 tsp pickle juice (optional – but adds great flavor!)
- 1/4 tsp turmeric
- 1/4 tsp salt
- 1/4 tsp black pepper
- paprika (to garnish)
Instructions
- Peel the hard-boiled eggs and slice them in half lengthwise. Gently scoop out the yolks and place them in a small mixing bowl. Arrange the egg white halves on a plate and refrigerate while you prepare the filling.
- Prepare the filling: To the yolks, add Greek yogurt, Dijon mustard, pickle juice, turmeric, salt, and pepper. Use a fork to mash everything together until the mixture is smooth and creamy.
- Fill the eggs: Remove the egg whites from the fridge. Spoon about 1 tablespoon of the yolk mixture into the center of each egg white half.
- Finish and serve: Sprinkle with paprika for a pop of color and flavor. Serve immediately, or store in an airtight container in the refrigerator for up to 5 days.
